    2 oz of gin
    1/2 tsp of bar sugar
    sparkling water (or other mineral water)
    lemon peel

    mix gin with sugar in the bottom of a chilled collins glass. add ice cubes and fill with sparkling water. stir gently ad garnish with lemon peel.
