Beer Float Popsicles

Mixed Drink Recipe from Cocktail Builder

1/2 cup of chocolate stout beer
2 tsp of sugar
vanilla ice cream

Stir together beer and sugar in a small saucepan. Bring to a boil, reduce heat, and simmer for 2 minutes. Set aside to cool. Once cooled, fill each of your popsicle molds with 2 tablespoon of the mixture. Add slightly softened vanilla ice cream, pushing it down into the mold until it's almost full, leaving about an inch of space at the top. Slowly add another tablespoon or so of beer on top, taking a short break if it starts to foam. Use a knife to gently stir the mixture together inside the molds. Insert wooden sticks if using and freeze the popsicles for a few hours or until fully frozen. This recipe is courtesy of 52 Kitchen Adventures.
